Wine composers

Welcome to our world where wines are musical creations bringing a full palette of emotions to life. Like a musician, the winemaker composes with the instruments to hand : the Terroir, the variety of grape, the wood, the process of winemaking.

So close your eyes, listen closely and taste !

Music in 3 Tempos for the AOP Corbières

ADAGIO : a slow wine

Adagio reveals the lightness of the Terroir and the altitude in the suppleness of its tannins. Feel yourself unwind with this slow-wine.

Blend of Grenache and Cinsault. Short macération . No oak ageing.

CRESCENDO : a wine with lively rhythm

Energy and tone resonate in the notes of Syrah and Grenache, grown to full maturity at high altitudes.

Blend of Syrah and Grenache, wine-ageing one year and half, with 6 months in demi-muids (oak barrels of 500 liters) for the Syrah

CRESCENDO WHITE : a singer-songwriter wine

The terroir in the widest sense imbues real personality, between citrus and ripened exotic fruits, and the beautiful freshness of the Pyrenean foothills.

Roussanne and Vermentino for a very aromatic wine, freshness and breadth in mouth

CUVÉE MAJEURE : the grand finale

The wine which reveals the very DNA of our domaine ; the depth, complexity, and potential of our Terroir. The Cuvée Majeure, an ode to Syrah, is the grand finale of this range, a true masterpiece. This wine has depth, but with etheral grace and elegance.

Mainly Syrah, long macération , barrel ageing for one year, followed by another year in vats

DE LA SWEET DANS LES IDÉES : a jazzy wine

The grape varieties of Viognier and Muscat, harvested late, get together and swing !

Made from late  picked grapes, only residual sugar without adding sugar or alcohol. A medium sweet wine, fresh and unctuous.

LE BRETON : a rock’n’roll wine

A newcomer bursting onto the scene, a rebel in the region. It’s the secret wine that is well worth knowing !

100 % Cabernet Franc at low yields, not destemming

CRESSAÏA : the Symphonie Fantastique

A composition we revisit each year, a magnum opus without compromise, showcasing the finest qualities of our Terroir. With a unique character thanks to the surprising combination of varieties, it brings concentration of flavour to the fore, without spilling into overripeness. A vital wine to keep. Our Terroir, intensified.

Marselan, Grenache, Syrah and Cabernet Franc. Manual destemming or not according to the grape varieties, put directly in new oak barrels of 500 liters without pumping. Manual crushing. Fermentation by indigenous yeasts. Maceration of 45 days at low temperature. Pressing. Malo-lactic fermentation in 1-year-old barrels and ageing on the lees for 1 year, then in vats for 1 additional year and finally ageing in bottles for at least 5 years before sending. Manual bottling by gravity without filtration. Very limited quantity of 1600 bottles. Demanding winemaking and ageing without concession, everything is done manually for an exceptional wine.
